Easy Banana Bread in a Bread Machine

Bread machine recipes are nice and easy - you pretty much plop in your ingredients, press a button, and come back to delicious bread a while later. This banana bread recipe for bread machine is no exception - it's easy, moist, and delicious! Use applesauce in place of butter to reduce the fat content...either way, it tastes great!

Notes

My regal kitchen pro over bakes this recipe so I tend to keep a close eye on it in the latter stages of baking and remove the bread before the cycle ends.

Ingredients

  • 2 large eggs
  • 1/3 cup butter or applesauce
  • 1 ounce skim milk
  • 2 bananas, mashed
  • 1 1/3 cup bread flour
  • 2/3 cup sugar
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts

Instructions

  1. Put the eggs, butter or applesauce, milk, and bananas in the bread pan.

  2. In a mixing bowl, mix the flour, sugar, baking powder, baking soda, salt and nuts and then add to the pan.

  3. Set bread machine to manufacturer's quick bread setting.

  4. Use a spatula to scrape down the sides of the pan after mixing five minutes to eliminate flour pockets.
