Butterscotch Squares

If you're looking for an easy baking idea that is also one of the tastiest healthy dessert recipes, then try this Butterscotch Squares recipe. My mother used to make this dessert recipe all the time when I was a kid. Here I have taken her recipe and made it more fitting for a healthy eating plan.

Notes

This dessert can easily be doubled. If you double this, use a larger baking dish and let it bake for closer to 30 minutes. This dish also freezes well.

Ingredients

  • 1/3 cup Earth Balance butter substitute
  • 1 cup SPLENDA brown sugar substitute
  • 1 egg, or equivalent egg substitute suitable for baking
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate bits (the higher the cocoa percentage the better)

Instructions

  1. In a sauce pan over medium heat, melt together the butter substitute and the brown sugar substitute until they are thoroughly combined.
     
  2. In a large bowl, combine the melted mixture, egg, flour, baking powder, baking soda, vanilla and salt. Mix until everything is combined.
     
  3. Pour the batter into a 10x10-inch baking dish sprayed with cooking spray. Sprinkle the chocolate bits over the top.
     
  4. Bake in a pre-heated 350 degree F oven for 20 to 25 minutes. Don't let it bake for over 25 minutes, as this will continue to harden up even after it has been taken out of the oven.
