Ham and Shrimp Fried Rice

Fried rice truly is a Chinese food staple! Make this fried rice recipe using ham or shrimp instead of the traditional pork, chicken, or beef. Serve with your favorite Chinese dish!

Notes


  • Variations:   Use 2 teaspoons of salt or patis (fish sauce) instead of soy sauce for a "white" rice dish.  Include crushed garlic, yellow or green onions before adding rice.  You can throw almost any leftover in for a change.  This recipe makes at least 4 large servings as a side dish.

Ingredients

  • 2 cup long-grain brown rice, uncooked
  • 1/2 cup ham, cubed
  • 1/2 cup shrimp, cooked
  • 3 tablespoon extra virgin olive oil
  • 6 egg whites, lightly beaten
  • 1/2 cup green peas, cooked
  • 2 tablespoon light soy sauce
  • 2 teaspoon MSG (optional)

Instructions

  1. Steam brown rice according to package directions.  Let cool and then refrigerate for at least two hours (preferably overnight).
     
  2. Heat the wok.
     
  3. Fry the egg whites in about one tablespoon of the olive oil. Set the cooked eggs aside.
     
  4. Add remaining olive oil to the wok and add the brown rice gradually, by breaking it apart with your hands or a fork so it is un-clumped.  Lower heat and fry about five minutes.
     
  5. Add, shrimp, ham, peas, and chopped cooked egg whites.
     
  6. Toss and fry a couple of minute, then add light soy sauce and MSG (if using). 
     
  7. Toss and serve.
