The health benefits of broccoli, cauliflower, cabbage, kale, and other cruciferous vegetables are off the charts. They contain a ton of iron, antioxidants, b vitamins, and minerals from the soil. This is a great way to use them while getting rid of some of that sulfur smell that turns most people away. Cauliflower has a great meaty texture and "tooth" to it, and lends very well to savory baked dishes like this one.
