Do you wish there was a way to enjoy the zesty flavor of a Chipotle burrito bowl, without consuming so many calories? Pulled Pork Quinoa Bowl is the answer to your dreams. This quick dinner recipe uses quinoa instead of rice, which adds a slightly nutty flavor to this meal, and is loaded with protein, fiber and iron.This dish is topped with all of your favorite Chipotle toppings, including black beans, corn, salsa and guacamole, so you won't even notice the absence of the rice!

Ingredients

  • 2 medium tomatoes, diced
  • 2 cloves garlic, minced
  • 1 medium yellow onion, diced and divided
  • 1 tablespoon lime juice
  • 1 cup quinoa
  • 1 (14-1/2-ounce) can black beans, drained
  • 1 tablespoon olive oil
  • 1 jalapeno, diced (seeds removed if desired)
  • 1 cup frozen corn
  • 3 cups Slow Cooker Pulled Pork
  • Guacamole

Instructions

  1. Make a quick salsa. Combine diced tomatoes, garlic, 1/2 of diced onion and lime juice together in a bowl. Allow to set at room temperature until ready to use.

  2. Cook quinoa according to package directions.

  3. Heat beans in a small pan over medium heat, just until warmed through.

  4. While quinoa and beans are cooking, heat olive oil in a skillet over medium heat. Cook remaining half of onion, jalapeno and corn together just until corn cooks through. Transfer to a plate and set aside.

  5. In the same skillet, heat pulled pork until it is warmed through.

  6. Scoop quinoa into a bowl. Top with pulled pork, then black beans and guacamole. Spoon corn mixture over the top, followed by the quick salsa. Serve.
