Why have just one candy bar when you can have a whole pie? With coconut, almonds, and chocolate, this Impossibly Easy Almond Joy Pie is a true delight. This chocolate pie recipe uses gluten free Bisquick to make preparations even easier. Since this healthy pie recipe has no crust, simply mix, dump and bake until completion. It can't get any easier than that. Bring this amazing pie to your next potluck, family holiday, or church bake sale. But, you don't need to wait for one of these events. You can make this pie whenever you need a sweet treat.

If you’re following a gluten free diet be sure to use gluten free Bisquick. Also, make sure that your nonstick spray and vanilla are gluten free as well.

Ingredients

  • 1 can (14 ounces) sweetened condensed milk
  • 4 eggs
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla
  • 2 cups milk
  • 1/2 cup Bisquick
  • 6 ounces sweetened shredded coconut, about 2 cups loosely packed
  • 1/2 cup chopped almonds
  • 3/4 cup semisweet chocolate chips, chopped
  •  
  • TO GARNISH:
  • 2 ounces chocolate chips, about 1/3 cup
  • 2 tablespoons heavy cream
  • 1 ounce almonds, chopped

Instructions

  1. Preheat oven to 350 degrees F (or 175 degrees C), and grease a 10-inch deep dish pie plate with nonstick cooking spray. Place the pie dish onto a foil-lined baking sheet. This will prevent a mess in case anything spills over during baking.

  2. In a medium bowl, whisk together the sweetened condensed milk, eggs, butter, and vanilla until combined.

  3. Add the milk and Bisquick, and continue whisking until well incorporated.

  4. Stir in the coconut, chocolate chips, and almonds, then carefully pour the batter into the prepared pie dish.

  5. Bake the pie for 55 to 60 minutes, then remove it from the oven and allow to cool.

  6. To garnish the pie, combine the chocolate chips and heavy cream. Microwave on high for 30 seconds. Remove the bowl, and stir the chocolate and cream together until smooth. Drizzle the chocolate cream over the top, then scatter the chopped almonds.

  7. The pie can be served at room temperature or chilled. Enjoy!
