This is an awesome meatless Monday dinner idea. Skinny Skillet Whatever is filled with nutritious vegetables, whole wheat penne pasta and savory Feta cheese. There is nothing more exciting than a vegetarian dish that you love just as much as your meat-filled meals. The greatest thing about this healthy pasta recipe is that you can add whatever vegetables you have (they don't always have to be the same ones). We like to make this at the end of the week with any veggies we have leftover. It's truly "whatever" you'd like it to be, and always amazing!
