Roasted tomatoes are one of my favorite ways to use up the abundance in my garden in the summer, but sometimes you don't want to run your oven for just that. I'd put them in while you're already cooking something else! No fuss! You could also use the jarred sun dried tomatoes packed in oil that find at the supermarket, and toss them right in at the end.
