Pearadise Muffins

Transport yourself to a better place and time with these Pearadise Muffins. This easy muffins recipe is a great way to get a delicious fruit and whole wheat into your morning routine.

Notes

 Variation: Grated lemon or orange zest may be added. To use sweet milk: omit yogurt and baking soda, increase baking powder to 3 tsps and use 1 cup fresh milk.

Ingredients

  • 1 cup flour
  • 1 cup whole wheat flour
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup plain yogurt
  • 1/4 cup light vegetable oil
  • 1/3 cup honey
  • 2 egg whites, beaten
  • 1 cup pears, diced

Instructions

  1. Preheat oven to 375 degrees F, and prepare your muffins pans.
     
  2. Mix together the flour, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg and salt.
     
  3. Stir pears lightly into dry ingredients.
     
  4. Combine yogurt, oil, honey and egg whites. Add dry mix to wet mix until just combined.
     
  5. Spoon into pans and bake for 20 to 25 minutes or until done.
