Cherry Clafouti

Diana loves to get creative with what she eats. She adapted this Cherry Clafouti recipe from The San Francisco Ferry Plaza Farmer’s Market cookbook with her own ideas on ingredients, and she was thrilled with the results. Ingredients

  • 1 tablespoon coconut oil
  • 1/3 cup NuNaturals NuStevia Sweetenerâ„¢ Stevia Baking Blend, or their MoreFiberâ„¢ Blend
  • 3 eggs
  • Zest of 1 lemon
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup whole wheat pastry flour
  • 1 pinch salt
  • 3/4 pound red cherries, unpitted and stemmed
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Spread coconut oil across bottom & sides of a shallow 9-inch or 10-inch round baking dish. Set on a rimmed cookie sheet.
     
  3. Whisk together the NuNaturals Stevia Sweetener™, eggs and lemon zest until well blended. Add coconut milk & vanilla and whisk again until blended. Add flour and salt, and whisk until batter is frothy.
     
  4. Pour about a third of the batter into the prepared baking dish. Scatter cherries on top in an even layer. Pour the rest of the batter over the top, being careful not to disturb your cherry arrangement.
     
  5. Bake until golden brown and puffed, approximately 35 to 45 minutes. Test center with knife or toothpick to come out clean to see when it is done.
     
  6. Serve at once, dusted with powdered sugar, or cool on a wire rack to room temperature and dust with powdered sugar just prior to serving.
