Lasagna is the epitome of comfort food. It's big, warm, and cheesy. However, often with comfort comes calories. This healthy lasagna recipe is loaded with veggies and protein, and free of the guilt that usually comes with the regular rendition. Even better, this dish is made in a slow cooker. Slow Cooker Vegetable Lasagna is so easy and turns out incredibly delicious. Simply brown your meat, saute your vegetables, and layer with the cheese and pasta sheets in a slow cooker. Turn it on and let it work its magic for a few hours. You'll go crazy over how good this lasagna is.

I've made slow cooker lasagna in the past and it turned out pretty well. I found it a bit runnier than oven lasagna, so now I cut back on the fluids. I also eliminate added salt and use unsalted tomatoes and sauces for a healthier version. I also like to add and layer two cups of fresh spinach.
