This looks delicious! My least healthy meal of the day is usually dinner, so I will have to try this out.

While I am a big fan of casseroles, this one has too many steps and involves using three pots to make the dish. I do however like the idea of putting all the vegetables in with the rice, including kale! Any ideas how one can cut down on the steps and pots used to make this dish?

Just OK. Needed to cook it longer - rice was still hard after recommended cooking time. Probably won't make it again. Spinach could be substituted for the kale.
