Ingredients

  • 1 1/2 pound extra lean ground beef
  • 3/4 cup onion, chopped finely
  • 1/3 cup low sodium Saltine cracker crumbs
  • 2 egg whites, slightly beaten
  • 3 tablespoons skim milk
  • 1 tablespoon chili powder
  • 3/4 teaspoon salt, or to taste
  • 3 cups homemade mashed potatoes
  • 1 can whole kernel corn with red and green peppers, drained (about 11 ounces)
  • 1/4 cup green onions, thinly sliced
  • 3/4 cup reduced fat taco seasoned cheese, shredded

Instructions

  1. Heat oven to 375 degrees F.
     
  2. In large bowl, combine ground beef, onions, saltine crackers, egg whites, skim milk, chili powder and salt, mixing lightly but thoroughly. Gently press into bottom of 9 inch square baking pan.
     
  3. Bake 20 to 25 minutes or until no longer pink and juices run clear. Carefully pour off drippings.
     
  4. Meanwhile in medium bowl, combine mashed potatoes, canned corn mixture and green onions. Spread over meatloaf to edges of pan and sprinkle over top with cheese.
     
  5. Broil 3 to 4 inches from heat for 3 to 5 minutes, or until top is lightly browned. Cut into 6 rectangular servings.
