Delightful Caramel Coffee Cake

This recipe is so gosh-darn good because it combines the goodness of coffee cake with the smooth sweetness of caramel. With this recipe, you will know how to make coffee cake that is universally beloved.

Ingredients

  • 6 ounces package reduced sugar caramels, about 21
  • 1/4 cup water
  • 2 cups white whole wheat flour, sifted
  • 1/2 teaspoon salt
  • 3 tablespoons sugar substitute suitable for baking
  • 1/3 cup butter substitute suitable for baking
  • 2 egg whites plus skim milk to make 3/4 cup
  • 1/2 cup pecans, halved

Instructions

  1. Place caramels and water in saucepan. Switch to warm heat for 15 minutes. Stir well to blend.
     
  2. Sift dry ingredients together. Cut in butter substitute.
     
  3. Stir in egg and milk mixture. Beat vigorously, but briefly. (Batter will be stiff.)
     
  4. Place pecan halves in the bottom of a greased 5 cup ring mold. Pour in batter. Drizzle caramel over top. Cut through batter to marble caramel.
     
  5. Bake in 400 degree F oven for 25 minutes.
     
  6. Loosen cake around edge of pan with knife, then turn on plate. Let cool a few minutes, then serve warm with butter if desired.

Could you clarify step #4, please. It doesn't mention when to put the batter in. Does the batter go in on top of caramel?
