Easy Cola Pot Roast

It may sound odd to use cola on your pot roast, but you'll be surprised at the fantastic flavor it provides. This recipe is simple and one the whole family can enjoy.

Cooking Time3 hr 30 min

Ingredients

  • 3-5 pound roast of your choice
  • 12 ounces can of Diet Pepsi
  • 1 can low-fat cream of mushroom or celery soup
  • 1 package dry onion soup mix
  • 1 clove garlic (minced) or 1/4 teaspoon garlic powder
  • 3 carrots, peeled and cut in 2-inch pieces
  • 4 russet potatoes, peeled and cut in quarters
  • 1 onion, sliced in quarters
  • Salt and pepper, to taste

Instructions

  1. Place roast in dutch oven or roasting pan with lid. Mix soups, Pepsi and garlic together and pour over roast.

  2. Cook at 325 degrees F for 3 1/2 hours Put in carrots, potatoes and onion last hour of cooking.

  3. Remove meat from pan and slice (will fall apart).

Anyone out there have the recipe for BJ Brewhouse's Beef Pot Roast? It's yummy!

you should not use ANY diet soda product to cook with. The heat changes the artificial sugar to a poison.

I have seen recipes very much like this one except they listed beer instead of cola. I would not use diet cola - either use regular cola, beer, or just plain water.
