Blue Cheese and Beef Lasagna

Creamy blue and ricotta cheese makes this a delicious dish to serve to your family! Add Blue Cheese and Beef Lasagna to your quick and easy recipes. You can serve it the night of or freeze it for a fast dinner option later!

Ingredients

  • 2 pounds lean beef tenderloin tips cut in 1/4 inch slices
  • 1 tablespoon oil
  • 8 ounces blue cheese
  • 8 ounces low fat ricotta cheese
  • 1/4 cup fresh chopped herbs (parsley, basil, thyme oregano)
  • Salt and pepper, to taste
  • 2 pounds whole wheat lasagna noodles

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Heat 1 tablespoon oil in large frying pan and brown meat on all sides to medium rare.
     
  3. In a bowl, blend the two cheeses, salt, pepper, and 1/2 of herbs.
     
  4. Line an 11 x 7 x 1 1/2 pan with noodles. Place 1/3 of the beef on top, then 1/3 of the cheese mix. Repeat layers -- pasta, meat, cheese mixture. Top with pasta, remaining beef, and cheese. Cover with remaining pasta, brush with oil and cover with remaining herbs.
     
  5. Cover with foil and cook for 1 hour. After cooked, it can be frozen.
