A typical cobbler recipe is a fruit-filled sugary dessert. This Zucchini Cobbler recipe from Alli from An Open Cookbook will have you rethink cobbler, as this dish is one of the tastiest easy vegetarian recipes you have never thought of before.

Alli says, "This healthy twist on cobbler adds a whole new dimension by using zucchini and whole wheat flour. Add in your favorite dried fruit, like figs, for a little something extra."

Yields: 4 servings

Ingredients
  • 2 zucchini, peeled and cubed
  • 3 tablespoons orange juice
  • 3 tablespoons plus 1/4 cup sugar
  • 1/8 teaspoon cinnamon
  • 3/4 cup whole wheat flour
  • 1/4 cup almonds, chopped
  • 3 tablespoons butter, small cubes
  • 6 dried figs, chopped (optional)
Instructions
  1. Preheat oven to 375 degrees F.
     
  2. In a small saucepan, heat the zucchini and orange juice over medium heat. Continually stir until the zucchini become thoroughly cooked, which takes about 15 minutes. Pour in the 3 tablespoons sugar and cinnamon. Stir for about 1 minute. Turn off heat and set aside.
     
  3. Meanwhile, mix the flour, remaining sugar and almonds. Using your hands, incorporate the butter until the flour mixture is the consistency of coarse cornmeal. Pour about 1/4 cup of this mixture in with the cooked zucchini until it dissolves. Prepare either 4 small ramekins for individual desserts, or a small oven safe dish, by spraying it with cooking oil or coating with a thin layer of butter.
     
  4. Sprinkle a layer of the flour mixture into the bottom of the dish(es). Spoon in an equal amount of the zucchini. Add the figs on top of this if you are adding them. Sprinkle the rest of the flour mixture on top. Bake until fully cooked and the cobbler is browned on top, which should be between 35 and 40 minutes. Remove from heat and serve with vanilla ice cream.
