Cauliflower N' Cheese N' Stuff

Basically, think of this recipe for Cauliflower N' Cheese N' Stuff as a simple cauliflower recipe version of a cheesy casserole dish. Since this dish is loaded with greens, quinoa and soy milk, you can safely add it to your list of healthy cauliflower recipes. Everyone is bound to thoroughly enjoy this delightful dish from KaraHadley.

Ingredients
  • 1 head cauliflower, chopped
  • 1 head-worth of cauliflower greens, chopped
  • 1/2 cup quinoa
  • 1 cup water
  • 1 1/2 cups soy milk
  • 1/2 pound cheese, broken up in some fashion
  • 2 tablespoons Dijon mustard
  • Black pepper, to taste
  • 1/4 cup breadcrumbs (optional)
Instructions
  1. Steam the cauliflower to just barely tender, and then set it aside.
     
  2. Pour water and quinoa into a pot, bring the water to a boil, reduce to medium, and cover.
     
  3. In another pot, pour in milk and turn the stove heat to medium. Once the milk has reached temperature add in the cheese and begin whisking.
     
  4. Once all the cheese has melted in, raise the heat slightly until the mixture begins to bubble. Continue whisking throughout all of this. After about 5 minutes of whisking the lightly bubbling mixture, remove the pot from heat and stir in the mustard.
     
  5. In the same pot, mix the cauliflower, greens, and quinoa. Spoon the mixture into one casserole dish or individual ramekins and top with breadcrumbs if desired.
     
  6. Bake the dish(es) in a 375 degree F oven for about 7 to 9 minutes, until the top is golden.
