Apple Cinnamon Sweet Potato Shmash

For a gluten free dish that perfectly captures the essence of fall, make this Apple Cinnamon Sweet Potato Shmash recipe from Lauren @ BalancedForkHealthyLife.com. This is one of the best seasonal sweet potato recipes out there.

Ingredients
  • 4 sweet potatoes, peeled
  • 2 tablespoons olive oil
  • 1 cup apple cider
  • 2 tablespoons cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon honey
  • 1 tablespoon vegan butter
  • Salt and pepper, to taste
Instructions
  1. Chop the peeled sweet potatoes into 1/4-inch rounds.
     
  2. On a lightly greased cookie sheet, spread out the sweet potato rounds and lightly spray with olive oil.
     
  3. Bake at 375 degrees F for about 35 minutes, until fork tender.
     
  4. In a medium pot, place the tender sweet potato rounds. Add the apple cider, cinnamon, nutmeg, honey, vegan butter, and salt/pepper.
     
  5. Mix together with a hand mixer until combined.
     
  6. Serve hot!
