Raw Sugar Cookies

Raw Sugar Cookies

No matter the holiday, this Raw Bake Sugar Cookies recipe from Dorothy Delaney is always a great idea. In terms of health value, good luck finding another sugar cookies as invigorating as this healthy cookies recipe.

Makes: 16 cookies

Cooking Time: 24 hr

Ingredients
  • 2 cups Almond Flour or Oat Flour (I do a mix of these)
  • 3 tablespoons coconut oil
  • 1/2 cup raw sugar or coconut crystals
  • 1/2 cup coconut milk
  • 2 teaspoons cinnamon
  • 1 pinch salt
  • Sprinkle for top: Coconut crystals or raw sugar
Instructions
  1. Process in a food processor almonds and oats until they become a fine meal. Add coconut oil, cinnamon, and salt; mix well.
     
  2. Add coconut milk slowly until the mixture becomes a dough.
     
  3. Spread on non-stick dehydrator sheet, cover with plastic wrap, roll until you get desired thickness. Score or cut into shapes. Prick each cookie with fork a few times. Dehydrate at 105 degrees F  for 12 to 24 hours; or until crisp (flip half way and remove non-stick sheet).
