Caramel Glazed Apple Cake

How can cake with apples and caramel taste anything but delicious? This caramel glazed apple cake is the perfect way to close Thanksgiving dinner on a sweet note.

Ingredients
  • 1 cup margarine
  • 2 cups sugar substitute
  • 3 eggs
  • 3 cups whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 teaspoons vanilla extract
  • 3 peeked and chopped tart apples
  • 1 1/2 cups chopped walnuts
  • 1/2 cup brown sugar subtitute
  • 1/4 cup margarine
  • 1/4 cup non-fat cream
Instructions
  1. Cream margarine and sugar subtitute  together until light and fluffy. Add eggs, one at a time, beating well after each addition.
     
  2.  Mix all dry ingredients and add to creamed mixture.
     
  3.  Stir in vanilla extract, apples, and walnuts. Spoon batter into a greased and floured 10-inch tube pan or 9" x 13" pan.
     
  4.  Bake at 325 degrees F until tester comes out clean (70 to 75 minutes). If using a tube pan, cool on rack for 20 to 30 minutes, then remove cake from pan and cool completely on rack. If pan cake, cool slightly.

Caramel Glaze (Using brown sugar substitute, butter and non-fat cream):

  1. Quantity above is for a tube pan cake. If making in a 9" x 13" pan, double the quantity of brown sugar substitute and butter. DO NOT substitute margarine for butter.
     
  2. Combine all ingredients in a saucepan; bring to a boil and stir occasionally.
     
  3. Boil 3 minutes without stirring, over medium high heat. Remove from heat.
     
  4. Let cool 3 to 4 minutes and add glaze over cake.
