Just-Like-Mom's Broccoli Cheese Soup

Serves: 4

Cooking Time: 20 min

Ingredients
  • 2 cups butternut squash, steamed until soft
  • 3/4 cup low sodium chicken broth
  • 2 teaspoons margarine
  • 1/4 cup onion, finely chopped
  • 1 tablespoon whole wheat flour
  • 1 cup skim milk
  • 3 ounces reduced fat cheddar cheese, shredded
  • 1 tablespoon reduced fat Parmesan cheese, shredded
  • 2 cups broccoli florets, steamed, chopped
Instructions
  1. In blender or food processo, purée cooked squash and low sodium broth until smooth and set aside.
     
  2. Melt margarine over medium-high heat in a large saucepan.
     
  3. Add onion and sauté until soft, 4-5 minutes.
     
  4. Sprinkle with flour and cook for another minute.
     
  5. Gradually add squash mixture and milk.
     
  6. Heat, stirring gently, until just below boiling.
     
  7. Add reduced fat cheddar and Parmesan cheeses. Whisk until cheese is fully melted.
     
  8. Stir in broccoli. Serve immediately.
