Better than Campbell's Tomato Soup

If you've had a fresh tomato soup recipe before, then you know how much more flavorful it is than any canned tomato soup variety. This Better than Campbell's Tomato Soup recipe from Jackie @ Jackie's Kitchen will simply blow you away.

Makes: 4 servings

Ingredients
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 6 Roma tomatoes, peeled and chopped
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons cornstarch
  • 2 cups chicken broth, or vegetable broth
  • 1 1/2 teaspoons organic sugar (sugar enhances the flavor of tomatoes nicely)
  • Dried basil, to taste
  • Dried oregano, to taste
  • Red pepper flakes, to taste
Instructions
  1. Heat unsalted butter and olive oil in a heavy stockpot and gently saute the onion and garlic.
     
  2. Stir in cornstarch and cook briefly, about 1 minute.
     
  3. Stir in broth, tomatoes, sugar, basil, oregano and red pepper flakes.
     
  4. Bring to a boil and then reduce the heat to a simmer and let simmer for about 20 minutes. Remove from the heat, then puree with an immersion blender or a stand blender or food processor.
     
  5. Return to the pot, taste and adjust seasonings accordingly and keep warm or serve immediately with a batch of croutons, your favorite bread, or a grilled cheese sandwich!
