Spicy Slow Cooker Pinto Bean Tortilla Soup

For a hearty and filling slow cooker soup option that is both vegetarian and gluten free, try this Spicy Slow Cooker Pinto Bean Tortilla Soup from Jackie @ Jackie's Kitchen. Jackie says, "This soup has such a simple list of ingredients, but the flavors are amazing."

Cooking Time: 12 hr

Ingredients
  • 1 cup dry pinto beans
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 6 small ripe roma tomatoes, diced
  • 2 teaspoons dried oregano
  • 1 teaspoon chipotle powder, or smoked paprika
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons cumin
  • 4 cups vegetable or chicken broth
  • 3 1/2 cups fresh filtered water
  • 2 whole serrano chiles, rinsed
  • 5 ounces fresh organic baby spinach
  • Corn tortillas
  • Extra virgin coconut oil
  • Salt and pepper
  • Fresh lime juice
  • Avocado, for garnish
  • Cilantro, for garnish
  • Sour cream (optional)
  • Cheese (optional)
Instructions
  1. The night before: Combine dried pinto beans with enough fresh filtered water to cover them in a medium bowl.
     
  2. The next morning: Drain and rinse the pinto beans and add them to the bowl of a slow cooker. To the beans, add the onion, garlic, tomatoes, oregano, chipotle powder, chili powder, cumin, broth, water and chilies.
     
  3. Turn the slow cooker to LOW and let it cook for 8 to 12 hours. Once the time has passed, turn the cooker to WARM or off, remove the chiles, and season it well to taste with sea salt and freshly cracked black pepper.
     
  4. Then stir in the spinach and let it wilt.
     
  5. To make the tortilla strips, slice the tortillas into strips and gently pan-fried them in extra-virgin coconut oil until crispy and delicious. Sprinkle them with sea salt when done.
     
  6. To serve the soup, ladle the soup into deep bowls, spritz with fresh lime juice, and garnish with avocado, cilantro, and homemade tortilla strips. Other possible garnishes include sour cream and cheese.
