Ginger Nut Pear Scones

How do you make a scone unique? Just add tantalizing ginger and juicy pear of course! Dig into this pear scones recipe and make extra to share with family and friends.

Yields: 12

Cooking Time: 15 min

Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar substitute
  • 1 teaspoon baking powder
  • 1 teaspoon ginger, ground
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter substitute, cut into 8 or 10 chunks
  • 3/4 cup pears, diced and dried
  • 1/2 cup slivered almonds, toasted and divided
  • 1/3 cup ginger, candied and chopped
  • 2/3 cup plain yogurt
  • 2 egg whites, beaten, for tops
  • additional sugar substitute, for tops
Instructions
  1. Heat oven to 425 degrees F.
     
  2. In large bowl mix flour, sugar substitute, baking powder, ground ginger, baking soda, and salt.
     
  3. Cut in butter substitute with pastry blender or two knives until mixture resembles coarse crumbs.
     
  4. Add the pears, 1/3 cup of the almonds and the candied ginger, toss. Mix in yogurt just to blend.
     
  5. Gather into a ball and gently knead three or four times on a lightly floured surface. Pat or roll out 3/4 inch thick.
     
  6. Cut out circles with 2-1/2 to 3 inch round cutter, re-rolling scraps as needed. Place on baking sheet, spacing apart.
     
  7. Brush tops with egg whites, sprinkle with remaining almonds, dividing equally, and sprinkle with sugar substitute.
     
  8. Bake in center of oven 12 to 15 minutes until springy to the touch and lightly browned. Remove to rack to cool.
     
  9. Serve warm or at room temperature.
     

Almonds

  1. To toast almonds, spread in an ungreased baking pan.
     
  2. Place in a 350 degrees F oven and bake five to ten minutes or until almonds are light brown.  Stir once or twice to assure even browning.

    Note that almonds will continue to brown slightly after removing from oven.
