Scrumptious Sloppy Joe Sandwiches

Any carnivores looking for a lighter alternative to famous Sloppy Joes recipes should try Scrumptious Sloppy Joe Sandwiches. These homemade Sloppy Joes are so good, you won't even know they're healthy!

Serves: 4

Cooking Time: 20 min

Ingredients
  • 1 pound lean ground beef, crumbled
  • 1 tablespoon chili powder
  • 1 fresh green bell pepper, finely chopped
  • 1/3 cup light rice vinegar
  • 1 can (14-ounce) stewed tomatoes with mexican seasonings
  • 4 whole grain hamburger buns, toasted
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1.  On stovetop, preheat a skillet to medium-high heat.
     
  2. Add beef, chili powder, bell pepper, salt and pepper and stir to combine.
     
  3. Cook meat until browned; drain fat.
     
  4. Stir in tomatoes and light vinegar. Cook until thickened, stirring constantly for about 8 minutes.
     
  5. Spread mixture onto toasted whole grain buns and serve hot.
