Breakfast Bagels with Lemon Chicken and Avocado Sauce

Who said bagels were just a breakfast food? Turn it into a new healthy meal. Instead of putting eggs and cheese on the bagel try lemon chicken with avocado sauce.

Serves: 4

Cooking Time: 10 min

Ingredients
  • 1 package ground chicken
  • 1 egg
  • 1/2 cup dry breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon each pepper, oregano and paprika
  • 1/2 teaspoon grated lemon zest
  • 1 clove garlic, minced
  • 4 low-fat bagels, halved
  • 1 cup sliced mushrooms
  • 2 tomatoes, sliced
  • romaine lettuce
  • 1/4 pound low-fat cream cheese
  • 2 ripe avocados, peeled and pitted
  • 1 clove garlic, minced
  • 1/2 cup low-fat yogurt
  • 1/2 teaspoon Tabasco sauce
  • juice of 1/2 lemon
Instructions
  1. Combine all sauce ingredients in a food processor and blend until smooth.
     
  2. Refrigerate sauce.
     
  3. Combine ground chicken, egg, breadcrumbs, salt, pepper, oregano, paprika, lemon zest and garlic.
     
  4. Shape into 4 patties about 4 inches in diameter and 3/4 inch thick.
     
  5. Grill over medium heat for 5 minutes per side until no longer pink inside.
     
  6. Arrange tomato slices then sliced mushrooms over bottom half of each bagel. 
     
  7. Place chicken on top and cover with avocado sauce, lettuce and top of bagels.
