Zippy Italian Coleslaw

Zippy Italian Coleslaw is the best coleslaw for your diet! With a variety of crunchy vegetables and a tasty, healthy coleslaw dressing, you can't go wrong! This no mayo coleslaw recipe cuts down on mayonnaise and refined sugar in a big way.

Notes

You may make this coleslaw up to 3 days ahead and refrigerate.

Ingredients

  • 6 cups cabbage, coarsely chopped
  • 1 cup red onion, diced
  • 8 ounces cherry tomatoes, cut in half
  • 3/4 cup celery, diced
  • 1/2 cup red bell pepper, chopped
  • 3/4 cup pimento-stuffed green olives, chopped
  • 3/4 cup black olives, coarsely chopped
  • broccoli, cut in bite-size pieces (optional)
  • cauliflower, cut in bite-size pieces (optional)
  • 1/3 cup light Italian dressing

Instructions

  1. Combine all vegetables in a large, resealable plastic bag.
     
  2. Pour Italian dressing into bag and shake bag to distribute dressing.
     
  3. Refrigerate for at least 6 hours before serving to allow the flavors to meld.
