Spicy Mexican Slaw

With the Latin flavors of cumin, cilantro, and jalapeno, this Spicy Mexican Slaw does not skimp on flavor! Nevertheless, low-fat milk and mayonnaise in small quantities make this a healthy coleslaw dressing.

Ingredients

  • 2 tablespoons light mayonnaise
  • 1 tablespoon skim milk
  • 1/2 teaspoon fresh jalapeno pepper, finely chopped
  • 1 tablespoon cilantro leaves, chopped
  • 1/2 teaspoon cumin
  • 1 6-ounce piece of cabbage (about 1/4 head)
  • 1 large carrot
  • 1 scallion

Instructions

  1. Blend mayonnaise, milk, jalapeno, cilantro, and cumin in a large bowl.
     
  2. Slice cabbage thinly and julienne carrot. Cut scallion on the bias into thin slices.
     
  3. Stir cabbage, carrot, and scallion into dressing, and salt and pepper to taste.
