For a healthy protein-laden salad recipe that everyone is sure to love, try out this Salad Nicoise recipe from Rocky Barragan, Rocky says, "This salad is definitely one of my favorites to order at a restaurant. Light and fresh but still carries that heartiness that won't have you walking away from the table still hungry."

Serves: 4

Cooking Time: 15 min

Ingredients
  • 1 can tuna
  • 5 cups Romaine lettuce
  • 6 ounces green beans
  • 2 eggs, hard boiled
  • 1 can garbanzo beans
  • 2 tablespoons black olives
  • 1 1/2 tablespoons Dijon mustard
  • 1 lemon
  • 1 pinch thyme leaves
  • 1 pinch oregano
  • 1 pinch basil leaves
  • 1/2 tablespoon olive oil
  • 10 grape tomatoes
Instructions
  1. First up set a pot of water to boil.

  2. While you're waiting for the water to come to a boil you can start on your dressing. The juice of 1 lemon, Dijon mustard, a pinch of basil leaves, thyme and oregano should be combined in a meauring cup or glass bowl. Once your ingredients are mixed together drizzle about half a tablespoon of olive oil in. You want just enough to round out the flavors.

  3. Once your pot of water has come to a boil go ahead and add your green beans. Let them boil for 3 minutes. After 3 minutes you'll want to stop the cooking process by eating putting them in an ice bath or by draining your green beans and spraying them down with cold water.

  4. Now it's time to assemble your salad. In a salad bowl add some chopped romaine, your grape tomatoes that you've halved, 2 tablespoons of black olives, a can of drained chickpeas and hard boiled eggs that you've quartered. Also, add your drained green beans.

  5. Drizzle your salad dressing and plate up. Once you have your salad on your plates place on top of your salad a half a can of tuna onto each plate. Serve and enjoy.
