Amazing African Fruit Salad

If you're looking for an African food recipe, this African fruit salad is the recipe for you. Complete with lettuce, pineapple, mango, coconut, mayonnaise and avocado, this recipe has something for everyone.

Ingredients
  • 2 quarts spinach, raw
  • 2 quarts Romaine lettuce
  • 1 quart chicory
  • 1 quart lettuce
  • fresh pineapple cut in pieces, three per bowl
  • 1 fresh mango, cut in strips, about 2-3 per bowl
  • 1 avocado, dipped in lemon juice and cut in strips
  • 1 fresh coconut, cut in thin slices
  • 2 oranges, thinly sliced with skins left on
  • 2 bananas, to taste, cut in chunks
  • light mayonnaise, to taste
  • chopped peanuts (or coconut), to taste
  • 1 pint strawberries, or any berry of your choosing
  • 4 limes
  • 1 quart light mayonnaise
  • 1 cup Cool Whip Free
  • 2 tablespoons sugar substitute
  • few drops green vegetable coloring
Instructions
  1. In a two-gallon bowl, stem, wash, and tear into medium-sized pieces: raw spinach, romaine, chicory and lettuce.
     
  2. Fill individual bowls with the mixture of greens.
     
  3. Add fresh pineapple cut in pieces, fresh mango in strips, avocado, dipped in lemon juice and cut in strips, fresh coconut, oranges, bananas, thinly coated with mayonnaise and dipped in chopped peanuts (or coconut) and strawberries, or the berries of your choosing. Arrange the fruits in individual bowls and serve with lime dressing.
     
  4. Mix in Cool Whip Free sweetened with sugar substitute and a few drops of green vegetable coloring.
     
  5. Serve immediately.
