Cracker Barrel recipes are beloved by many, they are usually quite heavy dishes. This recipe for Cracker Barrel Style Banana Pudding Made Lighter is one of the best copycat restaurant recipes because it replicates the taste that you know and love, but in a much lighter form. This is bound to become one of your new favorite no bake dessert recipes.

Ingredients
  • 1 1/2 quarts skim milk
  • 1 1/4 cups Egg Beaters
  • 1/4 teaspoon vanilla extract
  • 1 1/8 cups white whole wheat flour
  • 1 1/4 cups SPLENDA
  • 12 ounces sugar free vanilla wafers
  • 1 3/4 bananas, peeled
  • 8 ounces Cool Whip Free
Instructions
  1. Heat milk in pot on the stove top to 170 degrees F.
     
  2. Mix together the Egg Beaters, vanilla extract, white whole wheat flour and SPLENDA in separate container. Add mixture to milk, and cook until custard-like, stirring constantly.
     
  3. Spread vanilla wafers on bottom of a baking pan of your choice. Slice bananas and place over wafers. Pour custard over cookies and bananas, and cool. Spread Cool Whip over top.
