Easy Roasted Potato Salad

If you need a terrific healthy potato salad for parties or potlucks, then be sure to try out this Easy Roasted Potato Salad. Mustard and cilantro give this easy potato salad its unique flavor.

Serves: 6

Ingredients
  • 2 pounds new potatoes, not peeled
  • 10 garlic cloves
  • Drizzle of olive oil
  • Salt, to taste
  • Black pepper, freshly ground
  • 3/4 cup low fat mayonnaise
  • 2 tablespoons whole grain mustard
  • juice of one fresh lemon
  • 1/4 cup fresh cilantro leaves, washed and patted dry
  • 4 hard-boiled egg whites, sliced
  • 1/2 cup red onion, thinly sliced
Instructions
  1. Preheat the oven to 400 degrees F.
     
  2. In a mixing bowl, toss the potatoes and garlic with a drizzle of olive oil. Toss well. Season with salt and pepper.
     
  3. Place on a baking sheet and roast for 15 minutes. Remove from the oven and cool completely.
     
  4. Using a mini food processor, combine the low fat mayonnaise, mustard and lemon juice. Process until smooth. Season with salt and pepper. Add the cilantro and continue to process until incorporated.
     
  5. In a mixing bowl, toss together the potatoes and garlic, cilantro mayonnaise, sliced egg whites, and red onions. Mix well, and then season with salt and pepper.
     
  6. Cover with plastic wrap and refrigerate for 2 hours.
     
  7. Remove from the refrigerator and mix the salad. Reseason with salt and pepper if needed, and serve.
