Ginger Donuts with Lemon Frosting

For a bite sized treat that no one can resist, bake a batch of these Ginger Donuts with Lemon Frosting from KaraHadley. Making donuts can be easy and healthy so long as you have a donut pan handy. These homemade donuts are sure to please everyone.

Yields: 2 1/2 dozen mini donuts

Cooking Time: 5 min

Ingredients
  • 1 cup whole wheat pastry flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1 tablespoon fresh ginger, minced very finely
  • 3/4 teaspoon cinnamon
  • 3 dashes nutmeg
  • 1/4 teaspoon black pepper
  • 1 pinch salt
  • 1 egg
  • 1/3 cup milk
  • 3 tablespoons blackstrap molasses
  • 1 tablespoon butter, melted
  • 1/2 tablespoon vanilla extract
  • LEMON FROSTING:
  • 1 1/2 tablespoons butter, melted
  • 1 tablespoon lemon juice
  • 1/2 cup powdered sugar
  • Candied ginger, chopped (for garnish)
Instructions
  1. Mix the dry ingredients in one bowl. Mix the wet ingredients in another bowl. Then mix the two together.
     
  2. Then spoon the batter into a pastry bag, or a plastic sandwich bag and cut the tip off, and pipe the batter into your donut pan. You can spoon the batter in, too, but you tend to get big air pockets when you do that.
     
  3. Bake the donuts in a 425 degree F oven for 3 to 5 minutes.
     
  4. Once the donuts have cooled enough to touch, pop them out and bake another batch.
     
  5. When all the donuts are baked and cooled, it’s time to frost them.
     
  6. To make the frosting, stir the butter, lemon, and sugar together until there are no lumps. Spread it on each donut and top with a couple of pieces of chopped candied ginger.
