Blueberry Bear Claws

For healthy take on a sweet treat, give this Blueberry Bear Claws recipe a try. This delicious baked doughnut recipe is a healthy way to indulge your sweet tooth, plus you get antioxidants from the blueberries.

Serves: 8

Ingredients
  • 6 tablespoons sugar substitute suitable for baking, divided
  • 1/4 cup butter substitube suitable for baking
  • 1/4 cup almond paste
  • 1 cup low fat vanilla wafers, crushed
  • 1 tablespoon skim milk
  • 1 16-ounce package light hot roll mix
  • 1 1/4 cups blueberries, fresh or frozen
  • 1 egg, beaten
  • Lemon icing
  • Almonds, sliced (optional)
Instructions
  1. Cream 4 tablespoons sugar substitute, butter substitute and almond paste until thorouhgly mixed. Gradually add vanilla wafer crumbs, mix well. Add milk to moisten and set aside.
     
  2. Add remaining sugar substitute to roll mix and prepare dough according to package directions. Let rest 5 minutes. Roll in 24 x 8-inch rectangle dish. Spread with almond paste, cover evenly with blueberries.
     
  3. Starting on long side, roll up, seal and cut into 8 3-inch pieces. Make 4 evenly spaced slashes part way through each piece, bend into a curve so slashes open slightly.
     
  4. Place on greased sheet pans and let rise until doubled. Brush with beaten egg. Bake at 400 degrees F for 15-20 minutes or until lightly browned.
     
  5. Drizzle with lemon icing and garnish with sliced almonds if desired.
