Make Ahead Veggie Lover Lasagna

Here is a simple vegetable lasagna recipe that is perfect for anyone who enjoys eating healthy and tasty food! Made with zucchini, onions, tomatoes, and whole grain noodles, Make Ahead Veggie Lover Lasagna is a great dinner dish!

Ingredients

  • 1 1/2 jar roasted red peppers, drained and rinsed
  • 1 cup chopped onions
  • 3 cloves minced garlic
  • 3/4 cup wholewheat bread crumbs
  • 1 tablespoon balsamic vinegar
  • 1/4 salt
  • 1/8 ground red pepper
  • 1/8 black pepper
  • 2 teaspoons liquid smoke
  • 5 cups sliced zucchini
  • 6 medium tomatoes, sliced
  • cooking spray
  • 9 cooked whole grain lasagna noodles
  • 1/2 cup chopped fresh basil, divided

Instructions

  1. Saute onion and garlic in nonstick skillet in a teaspoon of water for 4 minutes or until browned.
     
  2. Place in food processor with red peppers, bread crumbs, vinegar, salt, red and black pepper, and liquid smoke. Process until smooth. Set aside.
     
  3. Broil the zucchini slices until blackened. 
     
  4. Broil the tomato slices until blackened.
     
  5. Arrange 3 noodles in the bottom of an 11" x 7" baking dish coated with cooking spray.
     
  6. Top with 1/2 of the zucchini slices, 1/2 of the tomatoes, 1/4 cup of fresh basil, and about 1/3 of the sauce. Repeat layers.
     
  7. Finish with a layer of noodles, then top with rest of sauce.
     
  8. Then cover and refrigerate until ready to bake.
     
  9. Cover with foil and bake at 350 degrees F for 30 minutes.
     
  10. Uncover, bake 10 minutes more. Let stand 10 minutes before serving.
