Lucky Irish Colcannon

Whether for St. Patrick's Day or just for an authentic taste of Ireland, make this delicious Lucky Irish Colcannon recipe. This easy colcannon is the perfect way to mix up you healthy cooking routine.

Ingredients

  • 1 pound cabbage, cored, quartered and shredded
  • 2 pounds potatoes, peeled and cut in half
  • 2 small leeks, washed and sliced (use the white and pale green parts only)
  • 1 cup skim milk
  • 1/2 teaspoon mace, ground
  • 10 tablespoons butter or butter substitute
  • Salt and pepper, to taste

Instructions

  1. In separate pans, cook cabbage and potatoes in boiling salted water until tender, about 12 to15 minutes.
     
  2. Drain cabbage and chop. Drain potatoes and mash.
     
  3. Meanwhile, combine leeks and milk and cook over med, heat until tender, 8 to 10 minutes. Add potatoes, salt, pepper and mace to leeks and skim milk and stir over low heat until blended.
     
  4. Add cabbage and 8 tablespoon butter and stir again to the consistency of mashed potatoes.
     
  5. Dot with remaining butter. Serve and enjoy.
