Ramani's Chicken Curry and Rice

Ramani has all new basic chicken curry recipe that you need to try! This recipe is great for beginning cooks because it's so simple and easy! Try it tonight and you'll quickly learn why they call Ramani the princess of the kitchen. Whew! Tasty!

Preparation Time: 30 min

Cooking Time: 40 min

Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 cup plain low fat yogurt
  • 2 tablespoons curry powder
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • Salt and pepper
  • 1/2 tablespoon lime juice
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Mix together all ingredients except chicken in a bowl.
     
  3. Cover chicken with the mixture and let it marinade for 30 minutes.
     
  4. Grill the chicken or place it in a baking dish that has been sprayed with non-stick spray and bake ior 30-40 minutes at 350 degrees F.

For preparing the curry rice:

  1. Ingredients:  2 cups cooked rice, 1/2 tablespoon curry powder 1/2 teaspoon garlic powder 1/2 teaspoon paprika, salt and pepper, 1/4 cup margerine or butter substitute, and 1/2 cup minced onions. 
     
  2. Combine onions and margerine in sauce pan on low heat stiring til onions are translucent. 
     
  3. Add spices and rice, combining well.
     
  4. Let cook for a few minutes until everything has melded well.
     
  5. Serve chicken over rice or side by side.
