Healthy Cooking: Asian Salmon Recipe

This is a simple dish, but it’s delicious. It's based on the Shanghai preparation at Mitchell's Fish Market. And the good news is that salmon is chock full of healthy omega-3s, and the steaming preparation coupled with the spinach and rice makes for a well-balanced, healthy meal.


Shanghai-Style Salmon

Ingredients:

  • One cup of rice
  • Salmon fillets (1 per person)
  • 1 box of frozen spinach
  • Two green onions, chopped
  • Ponzu sauce
  • Sesame seeds

Note: You will need a steamer for this recipe, which you can buy at a grocery store or Bed, Bath and Beyond for well under $10.

Steps:

  1. Cook rice according to package. Cook frozen spinach on stovetop according to package.
     
  2. Place your steamer in a pot filled with about half an inch of water in the bottom. Line your steamer with lettuce or cabbage leaves, and place into the pot, making sure there is enough room for the water to boil without touching the bottom of the steamer.
     
  3. Boil water. Once the water is boiling, add salmon to the steamer and reduce heat to medium. Cover the pot and allow to steam. Check fish every 2 minutes for doneness.
     
  4. Place a mound of rice in the middle of a shallow bowl and line with spinach. Place fish on top of rice, sprinkle with green onions and sesame seeds. Pour sauce over entire bowl.
