Grilled Bluefin Tuna

This marinade for Grilled Bluefin Tuna will be a tasty change from your usual dinner rotation. Sure to become a favorite, it's easy and summery.

Ingredients
  • 2 cups orange juice. freshly squeezed
  • 1/2 cup light soy sauce
  • 1 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 tablespoon ground cumin
  • 1 teaspoon black pepper, freshly ground
  • 1 1/2 tablespoons whole mixed pickling spice
  • 1 can (6-ounce) tomato paste
  • 1/2 cup sugar or sugar substitute
  • 6 bluefin or yellowfin tuna steaks, 1
  • 2 tablespoons unsalted butter or margarine
Instructions
  1. Whisk the orange juice, soy sauce, vinegar, oil, onion, garlic, red pepper flakes, cumin, black pepper, pickling spice, tomato paste, and sugar or sugar substitute together in a bowl.
     
  2. Arrange the tuna steaks inone layer in a large baking dish.
     
  3. Cover with marinade. Marinate, covered and chilled, overnight or up to 24 hours.
     
  4. Drain, but reserve the marinade in a bowl.
     
  5. Grill on a lightly oiled rack set 3 to 4 inches over glowing coals for 3 minutes on each side.
     
  6. Return the tuna steaks to the baking dish. Preheat the oven to 375 degrees.
     
  7. Spoon 1 tablespoon of the reserved marinade over each tuna steak.
     
  8. Bake for 4 to 5 minutes or until they are slightly rare.
     
  9. Top each tuna steak with 1 teaspoon of the butter and more freshly ground black pepper, to taste.
