Also, If you aren't a fan of shrimp, then you can swap the shrimp for chicken, scallops, or tofu. It's your choice!

Ingredients

  • 3 tablespoons dry sherry
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon grated ginger
  • 1 teaspoon corn starch
  • 1 tablespoon + 1 tablespoon canola oil
  • 3 cloves garlic, minced
  • 1/2 pound broccoli florets (4 cups)
  • 1/2 pound peeled, deveined shrimp
  • 1 (8-ounce) can sliced water chestnuts, drained
  • 2 scallions, sliced

Instructions

  1. In a small bowl, stir together the sherry, soy sauce, hoisin sauce, ginger, and corn starch.

  2. Heat 1 Tbs. of the oil in a large, non-stick skillet over medium-high heat.

  3. Add the garlic and stir-fry for 30 seconds.

  4. Add the broccoli and 1/4 cup of water. Cook until the broccoli is bright green and the water has cooked off, about 2 minutes. Then, remove from the skillet.

  5. Add the remaining 1 Tbs. of oil and stir-fry the shrimp until just pink, 2-3 minutes.

  6. Stir in the soy sauce mixture, and bring to a boil.

  7. Return the broccoli to the pan, add the water chestnuts, and toss them with the sauce.

  8. Sprinkle the scallions on top.
