Asian Soy Salmon

This Asian-inspired grilled salmon is a light and delicious way to enjoy healthy fish. The salty soy sauce combined with the sweet honey makes for a marvelous flavor. Serve this over sticky rice and vegetables.

Serves: 4

Preparation Time: 2 hr

Cooking Time: 15 min

Ingredients
  • 2 pounds salmon fillet
  • 1/3 cup ginger flavored soy sauce
  • 1 tablespoon honey
  • 1/3 cup regular soy sauce
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 3 green onions, chopped
Instructions
  1. Rinse the salmon in cool water and pat dry with paper towels.
     
  2. Mix together the ginger soy sauce and the honey until honey is dissolved and place in the bottom of a pan big enough to hold the salmon flat. Place salmon, skin side up, in the marinade and refrigerate for about 2 hours.
     
  3. Heat a large non-stick pan or grill to medium high and spray with cooking spray. Place salmon skin side up and cook for about 4 minutes. You want the salmon to get a little crusty, but be careful not to burn. Turn the salmon over, turn heat to medium, and continue to cook for an additional 5 minutes or until done. If the salmon is getting too done on the outside, remove to a microwavable plate and finish cooking in the microwave.
     
  4. While the salmon is cooking, place the regular soy sauce, butter and brown sugar in a small saucepan. Heat until sugar is dissolved, then add the onions and cook for about 5 minutes. Pour over finished salmon.
