Turkey Sausage Breakfast Casserole

Making a breakfast casserole recipe doesn't mean you have to cook up a heart attack! Try our Turkey Sausage Breakfast Casserole, which reduces the mountain of fat and cholesterol in traditional casserole recipes.

Serves: 6

Preparation Time: 15 min

Cooking Time: 45 min

Ingredients
  • 1 pound frozen hash browns, thawed
  • 1 pound turkey sausage
  • 1 pound Velveeta 2% Milk reduced-fat cheese, cubed
  • 8 eggs or equivalent egg substitute
  • 1/4 cup skim milk
  • salt to taste
  • pepper to taste
Instructions
  1. Heat oven to 350 degrees F. Spray a 9x13-inch dish with nonstick cooking spray.
     
  2. Cook turkey sausage in a skillet until browned and drain excess fat.
     
  3. Beat eggs or egg substitute with skim milk, salt, and pepper.
     
  4. In prepared dish, layer ingredients. Begin with half of hash browns, then half of turkey sausage, then half of eggs.
     
  5. Add half of cheese. Repeat layers with remaining half of ingredients.
     
  6. Bake for 45 minutes at 350 degrees F.
