Simple Icebox Pineapple Cake

It's like biting into a cloud. Simple Ice Box Pineapple Cake is made with cool whip and marshmallows. This makes for a fantastic no bake summertime dessert. The pineapples and bananas add a fruity sweetness that you'll love!

Serves: 10

Ingredients
  • 1 3/4 cups low fat milk
  • 1 large package miniature marshmallows
  • 1 cup crushed pineapple, drained
  • 1 cup cool whip
  • 2 diced bananas
  • 1/2 cup maraschino cherries, drained
  • 1/2 cup chopped nuts
  • Graham or vanilla wafer crust
Instructions
  1. Bring milk to boiling point and pour over the marshmallows. Stir until they're melted. Add pineapple.
     
  2. When mixture has cooled, fold in the whipped cream, bananas, diced cherries and chipped nuts.
     
  3. Line a 13x9-inch pan with graham cracker crust, reserving 1/2 cup for top.
     
  4. Pour fruit mixture into pan, top with remaining crumbs. Put in refrigerator until ready to serve.
