Low Fat Icebox Cake

Easy cake recipes don't get any easier than this, you don't even have to turn on your oven! As a bonus, this low calorie version will have your hips thanking you. Try your hand at this Low Fat Icebox Cake and remember to refrigerate at least 5 hours for a perfect cake!

Serves: 10

Ingredients
  • 2 cups fat free Cool Whip
  • 3 tablespoons confectioners' sugar
  • 1 teaspoon vanilla extract
  • 2 small ripe bananas, diced (about 1 1/3 cups)
  • 35 chocolate wafer cookies
  • 3 tablespoons semisweet-chocolate pieces
Instructions
  1. In a large bowl, add one cup of Cool Whip.
     
  2. Using a rubber spatula, gently fold in bananas.
     
  3. On one side of each of 5 chocolate wafers, spread about 2 heaping teaspoons banana-cool whip. Stack wafers on top of each other. Top stack with a plain wafer.
     
  4. Repeat stacking wafers on top of each other until all wafers are used, making 5 stacks of 7 wafers each. Turn each stack on its side; place stacks, one behind the other so that rounded edges overlap slightly to form a log on platter.
     
  5. Frost log with 1 cup Cool Whip and decorate with chocolate pieces.
     
  6. Cover and refrigerate at least 5 hours or overnight to allow wafers to soften.
