Guilt Free Cranberry Pear Crisp

Combine tart cranberries and sweet pears with three hearty whole grains to form one of the tastiest healthy dessert recipes around. This Guilt-Free Cranberry Pear Crisp will astound you with flavor!

Serves: 8

Baking Time: 25 min

Ingredients
  • 3 cups brown rice, cooked
  • 2 cups pears, peeled and diced
  • 1 cup cranberries, chopped (fresh or frozen will work)
  • 1/2 cup brown sugar substitute, packed
  • 1/3 cup white whole wheat flour, divided
  • Vegetable cooking spray
  • 1/4 cup rolled oats
  • 3 tablespoons butter or margarine
  • 1/4 cup pecans, chopped
  • 1/4 cup coconut, flaked
Instructions
  1. Combine rice, pears, cranberries, 1/3 cup sugar substitute and 2 tablespoons flour. Place rice mixture in 2-quart baking dish coated with cooking spray; set aside.
     
  2. Combine remaining flour, remaining sugar substitute and oats in bowl. Cut in butter with pastry blender until mixture resembles coarse meal.
     
  3. Add pecans and coconut; blend well. Sprinkle over rice mixture.
     
  4. Bake at 375 degrees F for 25 minutes, or until thoroughly heated. Serve warm.
Notes

Microwave Instructions: Prepare as directed using 2-quart microproof baking dish. Cook on HIGH 4 to 5 minutes, rotating dish once during cooking time. Let stand 5 minutes. Serve warm.
