Mock Chicken Salad

This Mock Chicken Salad has a great crunch to it between the apples and the celery, among other ingredients with yummy texture. With so many flavors blending together, this is one healthy salad that won't feel like it's missing a thing. The coconut curry paste pairs wonderfully with the salad, creating a side dish that can go with just about anything. Enjoy the vegetarian side dish that will liven up your plate and your meal.

Ingredients

  • 1 1/2 cup cashews, soaked
  • 1/4 sunflower seeds, (soaked one day, sprouted one to one and a 1/2 days - optional)
  • Juice from 1/2 lemon
  • 1/4 teaspoon turmeric
  • 1 garlic clove
  • 1 dash Himalayan rock salt or sea salt
  • 1 dash pepper
  • 1/4 teaspoon thyme
  • 1/2 apple
  • 1 celery stalk
  • 1 green onion
  • 1 sprinkle paprika
  • YELLOW COCONUT CURRY PASTE:
  • 1 teaspoon curry powder
  • 1 tablespoon nutritional yeast
  • 1 tablespoon psyllium seed
  • 1 red chili (or substitute green), depending on desired spiciness, OR 1/2 to 1 teaspoon cayenne pepper
  • 2 shallots, or 1 small cooking onion
  • 1 thumb-size piece galangal or ginger, sliced crossways
  • 5 to 10 large garlic cloves
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon whole cumin seed
  • 1/8 teaspoon fresh nutmeg (or substitute cinnamon)
  • 3/4 teaspoon dried turmeric, or 1 thumb-size piece fresh turmeric, minced
  • 1 tablespoon coconut crystal
  • 1 to 2 fresh or frozen kaffir lime leaves, snipped into small pieces with scissors (discard central stem), OR substitute bay leaf
  • 1 tablespoon fresh lime juice

Instructions

  1. Add 1st 8 ingredients into a high-speed blender or food processor. Process just a few seconds, until it's somewhat chunky.

  2. Pour into a large bowl. Add chopped celery, apple, onion and paprika.

  3. Mix everything together by hand. Pour into egg cups, use as a dip, or fill lettuce leaves or raw crackers Sprinkle with pepper and paprika. Chill.

  4. Yellow Coconut Curry Paste

  5. Mix all of the ingredients together. Add this paste to the mock chicken mixture, and mix in 14 ounces of coconut milk whenever you need it. Let stand to thicken.
