Lentil Salad with Pears and Cauliflower

For a tasty and easy meatless meal recipe that works great for lunch or dinner, give this Lentil Salad With Pears And Cauliflower a try. Pears add a nice sweet touch to this easy and hearty salad.

Serves: 4

Ingredients
  • 3 cups water
  • 2/3 cup dried lentils
  • 1 cup cauliflower florets
  • 1 ripe firm pear, peeled, seeded and chopped
  • 1 cup seedless cucumber, chopped
  • 2 green onions, sliced
  • 3 tablespoons fresh lemon juice
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons fresh mint, chopped
Instructions
  1. Bring water and lentils to boil in heavy medium saucepan. Reduce heat to medium-low, cover and simmer until lentils are tender but still hold their shape, about 20 minutes.
     
  2. Once the lentils are cooked, drain and run under cold water to cool. Make sure to drain well.
     
  3. Meanwhile, blanch cauliflower in pot of boiling salted water until just crisp tender, about 2 minutes. Drain. Run under cold water to cool. Drain well.
     
  4. Combine all ingredients in large bowl. Season generously with salt and pepper if desired.
     
  5. Refrigerate until serving, or up to 8 hours.
