Christmas Eve Slow Cooker Breakfast Oatmeal

Avoid the heavier breakfast recipes typically associated with Christmas morning and instead opt for this Christmas Eve Slow Cooker Breakfast Oatmeal recipe. Think of this slow cooker recipe like a healthier make-ahead version of your favorite stove top oatmeal.

Ingredients
  • 1/4 cup brown rice
  • 3/4 cup rolled oats
  • 4 1/2 ounces dried mixed fruit, chopped
  • 1 1/2 teaspoons cinnamon
  • 3 cups water
  • 1 tablespoon vanilla extract
Instructions
  1. Combine brown rice, oats, dried fruit and cinnamon in your slow cooker and mix well. Then, stir in water and vanilla.
     
  2. Cover and cook for 6 to 8 hours on a low setting. Stir before serving and add more water if desired.
     
  3. Serve hot, topped with brown sugar or drizzled with maple syrup if desired.
Notes

Any selection of grains will work for this recipe, so long as you keep the ratio 3 cups water for every 1 cup of grains. Other grains you can use in this dish include bulgur, barley, millet and corn meal.
