No Guilt Slow Cooker Cowboy Supper

This recipe for No Guilt Slow Cooker Cowboy Supper is one of the best slow cooker recipes with ground beef as it combines the taste of a cowboy casserole with the convenience of the slow cooker. Lasso in this recipe for dinner tonight!

Serves: 4

Cooking Time: 9 hr

Ingredients
  • 1 onion, chopped
  • 1 1/2 pounds extra lean ground beef, browned and then drained
  • 6 medium potatoes, sliced
  • 1 can reduced sodium red beans
  • 1 can tomatoes
  • Salt and black pepper, to taste
  • Garlic, to taste
  • 2 tablespoons whole wheat flour
  • 1 can (small) reduced sodium tomato soup
Instructions
  1. Place the chopped onion on the bottom of the slow cooker. On top of the onions, evenly layer the browned ground beef, sliced potatoes (keep the skins on for additional health benefit), and the beans
     
  2. Mix the can of tomatoes with the whole wheat flour and tomato soup. Spread tomato soup mixture over all ingredients in the slow cooker. Sprinkle with salt, pepper and garlic as desired.
     
  3. Cover everything and cook on low for 7 to 9 hours. 
Notes

If desired, you do not have to brown the ground beef prior to adding the ground beef. Additionally, feel free to an equivalent amount of pre-cooked dry beans and homemade tomato soup instead of using canned ingredients.
